Moussakaa

This is the Egyptian version. There are many variations in the surrounding countries. Moussakaa makes great main course, just serve with a green salad on the side.

Hummus

Use hummus as a dip or a spread for sandwiches. It is especially good on toasted pita bread. Hummus is rich in fiber, iron and vitamin C. It is also a good source of protein.

Food in Egypt

Egypt has provided some of the earliest archaeological evidences of leavened bread, although it was probably being prepared much, much earlier. That old Egyptian bread was made from emmer wheat –one of the earliest crops to be domesticated and now almost a relic- and had a dense interior.
