Think of Greece and what comes to mind first is usually blue seas, luminous skies, little white houses and very old ruins. That’s fine as Greek cooking cannot be understood without its Mediterranean influence or its ancient roots.

Greek pantry

A benign climate allows Greece to grow several crops, apart from the traditional olives and grapes. A good variety of fruits, including the well loved lemons, and vegetables, eggplant and spinach within the selection, as well as wheat, and other grains are grown. Although the terrain is not favorable for cattle grazing, it is ideal for sheep and goats.

Spanakopita

This Greek spinach pie is one of the best known recipes in Greek cuisine. It is simple, although managing phyllo pastry may seem challenging the first two or three times. Serve spanakopita warm as a vegetarian main or side dish. Serve it cold as a snack or appetizer.
