Moroccan milkshakes

Chilled drinks help Moroccans to beat the heat in their country. It is not surprising milkshakes are a favorite drink. The surprise comes in the flavors. Moroccan milkshakes are often flavored with rose or orange flower water, a pinch of ground cinnamon is another much-loved choice.

You are probably familiar with avocados as an ingredient for a salad; would you think an avocado milkshake is nice? Try it before giving an opinion. A common banana milkshake with a hint of rose or orange water becomes uncommonly delicious. Add fruits such as apples and pears - common in juices but not milkshakes - to your milkshake and, to truly get into the Moroccan spirit, don’t limit yourself to cow’s or goat’s milk, try also almond milk.

Recipes for Moroccan milkshakes

We suggest a few combinations. The procedure is the same in all cases and it will take about 5 minutes to get a fabulous shake, unless you need to make your own almond milk. Quantities have been estimated for 2 very generous servings.

Ingredients for a Moroccan banana milkshake

USA  
  bananas, peeled and coarsely sliced  
2   cups low-fat milk  
2 Tbs   sugar  
1 tsp    rose water or orange flower water

500 ml    low-fat milk  
50 g   sugar  
5 ml   frose water or orange flower water  

Ingredients for a Moroccan banana and apple milkshake

USA  
  medium sized apple, peeled, cored and cut into chunks  
1   banana, peeled and coarsely sliced  
2   cups low-fat milk  
2 Tbs   sugar  
1 tsp    rose water or orange flower water (optional)  
 
Metric  
  medium sized apple, peeled, cored and cut into chunks  
1   banana, peeled and coarsely sliced  
500 ml    low-fat milk  
50 g   sugar  
5 ml     frose water or orange flower water (optional)  

Ingredients for a Morocan avocado milkshake

USA  
  ripe avocado, peeled, pitted, and cut into chunks  
2 cups   low-fat milk  
2 Tbs   sugar  
 
Metric  
1   ripe avocado, peeled, pitted, and cut into chunks  
500 ml    low-fat milk  
50 g   sugar  

Ingredients for a Moroccan pear and almond milk shake

USA  
  pears, peeled, cored, and cut into chunks  
2   cups almond milk or 1 cup almond milk + 1 cup low-fat milk  
2 Tbs   sugar  
1 tsp    rose water or orange flower water  
 
Metric  
  pears, peeled, cored, and cut into chunks  
500 ml    almond milk or 250 ml almond milk + 250 ml low fat milk  
2 Tbs   sugar  
1 tsp    frose water or orange flower water  

Mix almond milk with low-fat milk in your shakes - this is common in Moroccan recipes - or use only almond milk for a truly vegetarian option.

Procedure

  1. Put all the ingredients into the blender.
  2. Blend on high until smooth.
  3. Pour into tall glasses and chill, if necessary, or enjoy straight away.

Cooking tips

Add ice to the blender or pour the shake over crushed ice for a more refreshing milkshake.

You can get easily 3 servings out of each recipe. Distribute the milkshakes among 3 regular glasses and don't fill to the brim.

Substitute low-fat milk with same quantity of non-fat milk to shake out some calories.

Chilled milkshakes and fruit juices are great to fight the Moroccan heat and that is why they are so popular.

Almond milk

1½ cups (200 g) blanched and peeled almonds
2 cups (500 ml) water

Bring almonds and water to the boil, simmer for 3-5 minutes. Process in the blender until smooth and pass through the sieve to remove almond bits from the liquid. Let it cool before using.

Almond milkshake

1 cup (150 g) blanched and peeled almonds
1 cup (250 ml) water
1/2 cup (75 g) sugar
2 cups (500 ml) low-fat milk
1/2 tsp orange water (optional)

Servings: 3-4

Grind the almonds. Add water and sugar to the ground almonds, mix well and leave to stand for 1 hour. whisk in milk and orange water. Pour into glasses and enjoy.

Tips - Ground almonds can be found in many shops and you are welcomed to try them for this recipe if you have a brand you trust. However, ground almonds lose flavor and get stale easily, you'll get much better flavor by grinding the almonds yourself. And if you have teh patience to crack, blanch and peel almonds, the flavor is incredible.

Add 1 drop of almond essence for more flavor.
