A dressing, dipping sauce, or marinade with olive oil, lemon or lime juice, garlic and other seasonings. Use with grilled meat or seafood.
- Blend chili, if using, peppers, garlic, salt, peppercorns, and lime juice into a paste - or crush them into a paste with mortar and pestle.
- Mix in olive oil, a little at a time.
- Garnish with chopped coriander.
Substitute lime juice with the same amount of lemon juice, vinegar, or a combination of the two. By all means, add more chili, if you like a hot sauce.
Other seasonings that work well with this sauce are ground cumin and dried oregano.
