Estonian beet salad

A traditional beet salad that is very popular and served in all sort of parties and holidays.

Ingredients

10 potato (boiled, chilled and cubed)
4 cucumber (pickled cucumbers, diced)
1 lb beef (roast beef, diced)
2 pk beet (bolied and peeled red beets, diced)
1 fish (salt herring, diced)
1 t vinegar
1 t mustard
1 t salt (or to taste)
2 pn pepper (or to taste, white pepper)

Instructions

Mix the diced ingredients, meats and potatoes together and set to one side.

Make a dressing by mixing the rest of the ingredients.

Mix everything together a serve or chill.

Notes

Soak the salted herring in water in a cool place for at least 8 hours and better overnight.
