Huevos a la Mexicana (Mexican style scambled eggs)
An easy and quick treat that can be eaten as breakfast a main meal or a snack.
Ingredients
1 T vegetable oil
1 T onion (chopped onion)
3⁄4 c tomato (chopped tomatoes)
1 chili pepper (Serrano chili, chopped)
2 egg (beaten)
Instructions
Heat oil in a skillet, adding the onion until transparent.
Add the tomato, chili and salt to taste.
After 5 minutes, add the eggs and stir gently.
Cover and cook for 2 minutes to then serve with bread or tortilla chips.
