Italian dressing

A classic dressing for all types of salads that can double as a marinade for meat. This is a vinaigrette with parsley, basil, and oregano, garlic and, to taste, a little lemon juice.

Ingredients

2 t parsley (dried)
1 t basil (dried)
1 t oregano (dried)
1 T lemon juice (optional)
1 clv garlic (finely chopped)
1 T onion (finely chopped)
1⁄2 c vinaigrette

Instructions

Put all ingredients in a glass container with a tight seal.

Shake well to mix. Check the seasoning.

Let it stand in the fridge at least 30 minutes.

Shake again before use.

Notes

Garlic and chopped fresh onion can be replaced by dried garlic and onion, 1/2 teaspoon dried garlic and 1 teaspoon dried onion for the original recipe.

If it is to be used as a salad dressing, other ingredients can be added, such as grated Parmesan or bell pepper, cut into small squares. Add 1-2 tablespoons of grated cheese, and 1-2 tablespoons chopped bell pepper to the original recipe.

Italian seasoning will keep for up to 10-15 days stored in the refrigerator, in a glass container with a tight lid. Shake before each use.
