Papas arrugadas

Boiled potatoes Canary Islands style. Serve with mojo colorado, mojo verde, mojo picón, or a dip of your choice.

Ingredients

2 lb potato (small, whole, clean)
  water
1⁄4 c salt (very coarse salt + some fine salt)

Instructions

  1. Place water and coarse salt in a kettle and bring to the boil.
  2. Add potatoes and boil until tender, about 15-20 minutes.
  3. Drain liquid and return potates to the kettle, sprinkle with salt, cover with a cloth and leave to rest for 15 minutes. Potatoes should appear slightly wrinkled.
  4. Serve warm

Notes

The best potatoes to use for this recipe are the indigenous varieties grown in the Canary Islands. As these are difficult to find out of the Canaries, use small to medium boiling potatoes.

This recipe is an easy way to make potatoes more exciting. It is ideal for a buffet or whenever planning food for a crowd.
