Swiss cheese fondue

A classic fondue recipe with a country specific twist.

Ingredients

1 1⁄4 lb cheese (Gruyere, Appenzell, Vacherie or a mix)
1 clv garlic (cut in two, rubbed on the inside of the fondue pot)
1⁄2 c wine (dry white wine)
2 T kirsch
1⁄4 t nutmeg (grated)
  bread (to dip)

Instructions

Without boiling, dissolve the corn starch in the white wine in the fondue pot.

While stirring with a wooden spoon, add the cheese in bit by bit.

Add the rest of the ingredients (except the bread) and keep stirring until it just begins to boil.

Cut the bread and dip in the mixture while it is still over the burner.
