Tomato marmalade
Did you know you can make tomato marmalade?
Instructions
- Drain the tomato, and slice the oranges and lemon very thin, quarter and remove any seeds.
- Using a cheese cloth, tie up the spices.
- Mix the tomatoes with sugar and salt in an 8 qt saucepan, stirring well. Then add the spice bag and the orange and lemon slices.
- Bring to a boil, stirring only occasionally. Cook for 45 minutes. Skim off any foam.

Use it as spread or to accompany other dishes. The tomato marmalade sweet flavor goes well with roast or grilles dishes, especially poultry and pork.
