These baked potato wedges can be cooking in the oven or the grill, while you barbecue your favorite meat.
- Assemble potato wedges on tin foil. Place red onion slices in between. Sprinkle with salt and pepper, add some butter and wrap foil loosley to make a parcel.
- Place on grill, turning over after 10 minutes, repeat this for approximately 40 minutes to 1 hour, depending on size of potato wedges.
Estimate 1 potato, medium to large, and 1/2 onion, medium size, per person.
Cook potato wedges outdoors, on the grill, during barbecue season and in the oven during the cooler months.
