For a vegetable to go with either meat dish you could do no better than a fine broccoli and olive salad with a fine lemon herb dressing.
14 c salad leaves (mixed salad leaves)
6 c broccoli (fresh florets)
4 oz cheese (crumbled, feta cheese)
1 bell pepper (red)
1 c olives (pitted black olives)
1⁄4 c olive oil
1⁄4 c lemon juice
1 T dill (fresh)
1 t garlic (minced)
1⁄2 t red pepper (crushed)
1 pn salt
1 T lemon zest (grated)
- Boil the broccoli in a large covered saucepan with a quart of water for about 2 minutes. Then drain and rinse. Combine the broccoli, salad greens, bell pepper and olives in a large salad bowl.
Prepare the dressing.
- In a lidded container, combine all the ingredients for the dressing - live oil, lemon juice and zest, dill, minced garlic, curshed red pepper, and salt - and shake well. Pour it over the greens and toss lightly
Garnish and serve.
- Then sprinkle the result with the feta cheese. you are ready to serve.
