Caper cream


Serve with boiled or grilled meat.


2 T olive oil
1 clv garlic (peeled)
2 T parsley (fresh parsley leaves)
1 cn anchovy (small can)
2 T water
  seasoning (salt and ground pepper to taste)
4 c capers


  1. Process capers, garlic, chopped parsley and anchovy fillet in a blender or food processor with the water. Mix in oil.
  2. Place in a microwave safe container. Cook on high for 3 minutes and stand for 1 minute.


About 66 calories per serving, most of it from the olive oil, and virtually no saturated fat.

High setting is estimated for a 800 watts microwave. If your microwave is more powerful, you may need to reduce slightly the cooking time - initially, try 30 seconds less - or increase the cooking time if it is less powerful - try 30 seconds more.
