Serve this chilled avocado cream as a cold appetizer or as refreshing snack.
1 lemon (the juice)
3 avocado (ripe, peeled, diced and soaked in lemon juice)
3 c broth (chicken broth or stock, clarified, chilled)
1 pn pepper
2 tomato (ripe, peeled, de-seeded and diced)
6 dr tabasco
- Process the diced avocados and chicken broth in the blender until smooth. Season with salt, pepper and a few drops Tabasco.
Serve the chilled cream garnished with diced tomato.
