Danish pickled cucumbers

Description

A garnish of fresh dill is ideal for this very easy pickled cucumber salad. Sprinkle chopped fresh dill just before serving.

Ingredients

3 cucumber (peeled and sliced thin)
1⁄2 c vinegar
1⁄2 c water
2 T sugar
1 t salt
1⁄4 t pepper (white pepper)
2 T dill (fresh, chopped)

Instructions

  1. Layer the cucumber slices in a pan or salad bowl.
  2. In a small bowl, whisk vinegar, water, sugar, salt, and pepper until well mixed.
  3. Pour the vinegar mix over cucumber slices.
  4. Cover the cucumber and refrigerate for at least 2 hours.
  5. To serve, drain cucumber slices and sprinkle fresh dill over them.

Easy!

Notes

Choose medium-sized cucumbers, about 6 inches long.

If you don't have dill, substitute with fresh chopped parsley.
