This recipe is an example of how a touch of herbs makes an incredible impact in taste. Peas can be prepared in small quantities, ideal for a dinner for one or two.
- Boil 3/4 cup of water in a pan with the salt. Add onions an lettuce leaves, cover and simmer for 10 minutes.
- Add frozen peas. Bring back to boil and simmer for a further 10 minutes, or until water is absorbed and peas tender.
- Drain. Discard tarragon sprig, if used. Transfer to a warm serving tray and sprinkle with water.

Make this recipe dairy and milk free by substituting butter with 1-2 Tbs vegetable oil. Making it dairy free also makes it adequate for the most strict vegetarians. As it is, it would suit those who don't eat meat but allow dairy - milk, yogurt, cheese - in their diet.
Substitute fresh tarragon with 1-2 teaspoons dried tarragon or with other herbs, such as parsley and mint.
