German tomato soup (tomatensuppe)

Probably there are more than a thousand times as many tomato soup recipes in the world as countries. This German tomato soup recipe is definitively warming and tasty.

Ingredients

2 lb tomato
2 onion (finely chopped)
2 t basil
1 pn thyme (dried)
1 T gin
  seasoning (salt and pepper to taste)
4 T almond (flaked or slivered almonds)
2 clv garlic (minced)
1 pn marjoram (dried)
1 pn rosemary (dried)
3 c broth (beef broth)
4 T cream (crème fraîche)

Instructions

Heat oil in a pan over a medium-low heat, and stew onions and garlic. Add tomatoes and herbs and, when it bubbles, set the heat to low, cover and stew slowly for about 15 minutes..

Heat bouillon to boiling point and pour into the pan with the tomato, simmer for another 5 minutes more.

Strain through a sieve. Heat once more, stir in the tomato puree and add the gin.

Serve in soup bowls garnished with crème fraîche and flaked almonds, if desired.

Notes

You can substitute beef broth with the same amount of boiling water and 1-2 beef stock cubes.
