There is a traditional Italian wedding soup that uses some of the same ingredients as the minestrone. But it is much more focused on the meat than the vegetables.
1⁄2 lb meat (loaf mix - half ground beef and half ground pork )
1⁄4 c milk
1⁄4 c cheese (grated Parmesan cheese)
1 clv garlic
1⁄4 t oregano
1⁄4 t basil
2 t parsley (dried)
- Combine the ingredients listed (except the meat) and add a dash of salt and of freshly ground pepper.
- Shape the meat loaf mix into 1/2 inch balls and sprinkle on a little oregano.
- Simmer everything in a large pot for about 20 minutes.
