This recipe serves to replace mashed potatoes in a low carbohydrates or low calorie diet. Serve mashed cauliflower as you would mashed potatoes.
- Cook cauliflower as usual until just tender and drain.
- Run through food processor, blender, or mash by hand with a masher.
- Mash in the cheese and garlic ingredients.
- Salt and pepper to your liking and serve.
Want a different flavor? Replace 1/2 cup sharp cheddar cheese with a different cheese like feta, or mozzerella ... or 1/4 cup of your favorite low carb salad dressing, such as blue cheese!
