Mashed cauliflower


This recipe serves to replace mashed potatoes in a low carbohydrates or low calorie diet. Serve mashed cauliflower as you would mashed potatoes.


1 pk cauliflower (frozen cauliflower, 1 lb bag)
4 oz cream cheese (about 1/2 package)
1⁄2 c cheese (sharp, mature flavor Cheddar)
2 t garlic (crushed or minced)
  seasoning (salt and pepper to taste)


  1. Cook cauliflower as usual until just tender and drain.
  2. Run through food processor, blender, or mash by hand with a masher.
  3. Mash in the cheese and garlic ingredients.
  4. Salt and pepper to your liking and serve.


Want a different flavor? Replace 1/2 cup sharp cheddar cheese with a different cheese like feta, or mozzerella ... or 1/4 cup of your favorite low carb salad dressing, such as blue cheese!
