Sweet melon and savory ham are perfectly matched. This time they are presented as a cold soup.
2 melon (medium size, skind and seeds removed, diced)
3⁄4 c ham (serrano ham, shredded)
salt (to taste)
pepper (to taste)
crouton (or toasted bread, for garnish)
- Peel melons, discard seeds an dice. Blend until smooth. Season with salt and pepper to your taste. Chill for 1 hour minimum.
- Serve in soup bowls, topped with shredded Serrano ham and with toasted bread on the side.
