Goes well with meat, particualrly lamb and turkey.
1 c onion (finely chopped)
4 clv garlic (large, minced)
2 t ginger (peeled and grated)
1⁄2 c water
1⁄2 c sugar (light brown sugar)
1⁄2 c vinegar (white wine vinegar)
1 t salt
- Using a wok, mix together all the ingredients over a medium-high heat.
- Bring to a simmer, reduce heat and simmer gently for 30 minutes. Remove from heat, cool slightly.
- Place mixture into a food processor and puree for a few seconds, until smooth.
- Serve warm or at room temperature.
