Orzo with brown butter

A pasta recipe as simple as it can be. This recipe will serve six people as a starter or side dish and four as a main course.

Ingredients

1⁄3 c butter
3 T cheese (grated Kefalotiri cheese)
8 oz pasta (orzo)
  water (to cook the pasta)
  salt (to cook the pasta)

Instructions

  1. Cook orzo according to package. Drain and keep warm.
  2. Melt butter in a small pan over medium-high heat and cook until it turns light brown. Don't overcook.
  3. Place hot, drained orzo in a serving bowl.
  4. Pour butter and grated cheese over orzo and stir to combine.
  5. Serve immediately.

Notes

Start preparing the brown butter sauce while the pasta is cooking, with a little practice, the timing will be perfect.

If you don't have it, substitute 3 tablespoons Kefalotiri cheese with the same amount Parmesan cheese.

Margarine is a perfect substitute for butter.

Orzo is a type of pasta shaped like a grain of barley or a grain of rice. If you don't have it, use the brown butte sauce with any small pasta shape or white rice.

 

Orzo pasta has been given this name because of its shape. Orzo is the Italian word for barley.
