Simple food becomes bright and flavorful with the addition of a simple salsa such this peach one.
2 peach (ripe but not mushy, pitted and chopped coarse)
1 bell pepper (red, small, cored, seeded, and diced)
1 onion (red, chopped)
1⁄4 c parsley (fresh leaves, chopped)
1 clv garlic (medium size, minced)
1 chili pepper (stemmed, seeded and minced jalapeños)
1⁄4 c juiice (pineapple juice or peach juice)
salt (to taste)
- Combine all ingredients. Salt to taste.
- Cover and place in the fridge for 1 hour to 4 days. This allows everyone to mingle a bit.
