Pita gyro sandwich

A gyro is a Greek dish of meat roasted in a vertical rotating spit. It is usually served on pita bread with sauce. This is a recipe to make a similar sandwich at home.

Ingredients

1 lb pork (loin or boneless chops, cut into long strips, about 1/4 inch thick)
1 clv garlic (finely chopped)
1⁄2 t oregano (dried)
1 t salt
1⁄2 t pepper
3⁄4 c wine (red wine)
1 c sauce (tzatziki)
4 bread (pita pockets)

Instructions

Mix the wine, 1 tablespoon olive oil, salt, pepper, and oregano in a bowl, place the meat into the marinade, cover and let it stand in the refrigerator overnight, or up to 24 hours.

When it is time to cook, drain the liquid and heat 1 tablespoon olive oil in a skillet and fry meat in olive oil.

Place warmed pita bread on plates, distribute meat on top, cover with some tzatziki, and roll.

Notes

If you do not have tzatziki, use plain yogurt. You can also add some sliced tomato and shredded lettuce.

Other sauces and other accompaniments are allowed. On street shops, gyros can be served with fries, onion rings and ketchup, very much like a burger.
