This ketchup goes well with meatloaf, roast pork and tofu.
1 c prunes (pitted)
1 c water
1⁄4 c molasses (un-sulfurized)
1⁄4 c vinegar (Sherry wine vinegar)
2 T sugar
seasoning (salt and freshly ground pepper)
- Combine all the ingredients in a medium saucepan and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Remove and discard the star anise pod.
- Puree until smooth, salt and pepper to taste and allow to cool.
