Red chrain

Chrain, also known as beet horseradish, is a popular sauce in Jewish cooking. It is dairy free and can be served with meat or fish. It goes well with smoked fish.

Ingredients

2 beet (small, raw, peeled and grated)
4 T vinegar (white wine vinegar)
1 t salt (kosher salt)
2 pn sugar

Instructions

  1. In a bowl, mix grated horseradish, beet, vinegar, salt and sugar.
  2. Stand for 1 hour before serving.

Notes

Prepared horseradish can also be used - omit the vinegar.

For a milder flavor, add 2 tablespoons yogurt - it would not go with meat dishes.
