Robusta Italian style compound butter

This flavored butter is great on steak, pork, chicken, seafood and potatoes or vegetables. It is the best mixed in your ground meat for burgers.

Ingredients

1 bn parsley (large, Italian parsley)
5 clv garlic (large)
1⁄4 c olive oil
1⁄2 t salt (kosher salt)
3 T cheese (grated Parmesan)
1 lb butter (sweet cream butter, softened)

Instructions

  1. Put butter in a food processor armed with chopping blade add parsley, garlic and olive oil begin to chop about 20 seconds; then add salt and cheese continue for 30 more seconds.
  2. Remove mixture and put into a stand mixer bowl with the paddle attachment blend about 1 1/2 minutes until creamy and well blended.
  3. Remove the butter compound and place on a large piece of plastic wrap and shape into a log form and place in the refrigerator to harden or use while soft.
