This is only one of many ways to create a rustic style chicken meal.
1 1⁄2 lb chicken (boneless, skinless and cut into 1 inch strips)
1 T bacon (diced fresh bacon or cooked bacon, crumbled)
1 cn tomato (14.5 oz can, diced tomatoes, drained)
1 cn artichoke hearts (15 oz can, drained and quartered, or frozen cooked hearts)
1 cn mushroom (4 oz can, sliced mushrooms, drained)
2 T mustard (Dijon mustard)
- Place all ingredients in a 3 1/2 quart slow cooker. Stir to just combine.
- Cover and cook on the low setting for 6-8 hours. Serve over rice.
