Salmon in mustard sauce


This salmon recipe is so simple even an absolute beginner should be able to pull it off and surprise guests with flavors and a presentation as good as that from the professionals.


  salt (coarse)
  seasoning (salt and pepper to taste, 1/2 cube fish stock)
1 1⁄2 c cream
1 zucchini (cut into long, thin slices)
1 carrot (large, peeled and cut into sticks)
1 lemon (quartered, for garnishing)


  1. Preheat oven to 350°F.
  2. Cover an oven pan with coarse salt. place the salmon on top. Season with salt and pepper and sprinkle the herbs on top. Bake in the oven for about 20 minutes.
  3. heat the cream in a pan to the boiling point. Dissolve the fish stock cube in 1 Tbs water and add to the pan, together with the mustard. Season.
  4. Blanche the sliced zucchini for 1/2 to 1 minute, the carrot for 1 to 1½ minutes. Drain.
  5. Cut the salmon in four pieces, if necessary. Place 1 piece of salmon on each plate, pour a little mustard sauce around, some blanched carrot and zucchini on one side of the salmon and 1 quarter lemon on the other. Serve.


If you wish, add a little white wine to the sauce when incorporating fish stock and mustard.

Steamed potatoes or potato mash make great sides to this recipe.

Salmon is considered a healthy option because of its rich content in protein, omega-3 fatty acids and vitamin D.
