Salmon in mustard sauce

This salmon recipe is so simple even an absolute beginner should be able to pull it off and surprise guests with flavors and a presentation as good as that from the professionals.

Ingredients

1 lb salmon (fillet or steak in one piece)
  salt (coarse)
1 T herbs (your choice of aromatic fresh herbs, chopped)
  seasoning (salt and pepper to taste, 1/2 cube fish stock)
1 T water
1 1⁄2 c cream (heavy cream, double cream)
1 T mustard (prepared mustard)
1 lemon (optional, quartered, for garnishing)

Instructions

  1. Heat the oven to 350° F.
  2. Cover an oven pan with coarse salt. Place the salmon in the pan. Season with salt and pepper and sprinkle the herbs on top.
  3. Bake in the oven for about 20 minutes.
  4. Heat the cream in a pan to the boiling point. Dissolve the fish stock cube in 1 Tbs water and add to the pan, together with the mustard. Season.
  5. Cut the salmon in four pieces, if necessary. Place 1 piece of salmon on each plate, pour a little mustard sauce around, some blanched carrot and zucchini on one side of the salmon and 1 quarter lemon on the other. Serve.

Notes

If you wish, add a little white wine to the sauce when incorporating fish stock and mustard.

While the salmon cooks, parboil or steam 1 carrot, peeled and cut into sticks for 1 to 1½ minutes, and 1 zucchini, cut into long and thin slices, for 1/2 to 1 minute. Drain and serve as garnish.

Steamed asparagus, steamed potatoes or potato mash also make great sides to this recipe.

Salmon is considered a healthy option because of its rich content in protein, omega-3 fatty acids and vitamin D.
