Scrambled tofu on toast breakfast

A healthy and delicious vegetarian breakfast.

Ingredients

1 pn turmeric
1 T cooking oil (vegetable oil)
  seasoning (salt and pepper to taste)
5 oz tofu (firm tofu)
2 sli toast

Instructions

Drain the tofu and mash it with a fork until smooth.

In a frying pan, heat the vegetable oil and add the tofu.

Season with salt, pepper and turmeric and fry, stirring constantly, until hot and lightly brown.

Serve immediately on toast garnished with cherry tomatoes and fresh coriander.
