Southern kicken chicken with a sweet jacket

My grandmother and mother made it. I make it, as do all my brothers and sisters. Their grown grandchildren are making it - 5 generations! And now my children are making it. I call it southern kicken chicken with a sweet jacket.

Ingredients

8 pce chicken (chicken legs)
16 T butter
  parsley (fresh sprigs, for garnish)
1 lemon (sliced and twisted, for garnish)
1 seasoning (summer in the South barbecue rub)
1 c sauce (sweet barbecue sauce)

Instructions

Preheat grill.

Prepare two large sheet pans with foil and then spray with non stick spray.

Wash Chicken, SEPARATE THE LEG FROM THE THIGH pat dry.

Place chicken on baking pans. Lift the skin and rub with butter as far as you can push your fingers. Then lift skin again and place about 1 tsp to 1 Tbs of chicken rub under skin and rub it in good. Then rub the out side skin with butter and chicken rub. Continue this until all 8 leg thigh pieces are done. Then wash your hands.

Now it is time to place chicken on grill for about 40 minutes to1 hour with lid down keep turning often for the last 15 minutes keep applying sauce during cooking.

When time is up, remove chicken. Then cover in Sweet sauce, cover all the chicken and let stand five minutes. Save some sauce to scoop over finished chicken. Remember to warm the sauce again before putting over finished chicken.

Garnish with lemon twist and fresh parsley.

Notes

As a family we travel the world without leaving our kitchen. I feel there is great importance in exposing children to other cultures; there is no better way than through food. Every week we are somewhere different. Last week Thailand, this week Japan now we are moving on to Cuba. I research the culture then the dish we are making then prepare it sometimes together and then at dinner we talk about the dish. The story behind the dish, spices and herbs used and where they came from. My son who always said, "I do not like that" is no longer saying that he looks forward to trying everything. My oldest son is beginning to teach the same to his children. This makes for fantastic family time, we are creating memories daily. I must say the best recipe is the one from the good old USA.
