This spicy pumpkin ketchup goes well with meatloaf and smoked sausage.
1 1⁄2 c pumpkin (cooked pumpkin or canned, pureed)
1 onion (medium size, finely chopped)
1⁄2 c vinegar (cider vinegar)
1⁄2 c apple sauce
1⁄4 t clove (ground)
1⁄4 t cayenne pepper
1⁄4 t pepper (ground)
4 T brown sugar (light brown sugar)
1⁄2 t curry (curry powder)
1 c water
- Combine all the ingredients and bring to a boil, reduce heat and boil gently for 1 hour.
- Puree until smooth, and allow to cool before serving.
