Stir-fried pak choy with garlic and mushrooms

Pak choy is a type of cabbage from Southern China, where it has been in the menu since the fifth century.

Ingredients

2 T cooking oil (nut oil)
1 c mushroom (chopped)
1 clv garlic (crushed)
1 pak choy (large, clean, cut into strips)
1 T soy sauce (or tamari, a wheat free soy sauce)

Instructions

Heat the oil in a wok over a high heat. Add mushrooms and crushed garlic. Cook for 1-2 minutes.

Stir in the pak choi and cook for a further minute.

Mix together cornstarch, oyster sauce and soy sauce. Add to the wok.

Cook until pak choi has wilted and mushrooms are tender.

Serve straight away.

Notes

For a gluten free version use tamari. Light soy sauce could be used, but check the list of ingredients to be sure it is gluten free. Check also the ingredient list for the oyster sauce.
