Swiss fried apples and bread

Another Swiss breakfast option and surely a favorite with children. The flavors of apples and cinnamon blend beautifully.

Ingredients

4 T butter (unsalted butter)
2 apple (peeled, cored, quartered and sliced thin)
1 pn cinnamon
4 sli bread (toasted and diced)

Instructions

Heat 2 Tbs butter in a large skillet over medium-high heat.

When the butter is bubbling, add apple slices and sprinkle cinnamon and sugar over. Cook for 5-6 minutes, turning frequently with a spatula.

Add diced, toasted bread and turn heat to medium low. Continue to cook for another 5-6 minutes, stirring frequently.

Place cooked apple and bread slices on a serving platter and top with remaining butter.

Serve immediately.

Notes

Cut the toasted bread slices into 3/4 inch (190 mm) cubes.

For strict vegetarians, substitute butter with vegetable margarine or vegetable oil. Nut oil adds a nice touch, try it.
