This ketchup goes well with just about anything. It is especially good with fried fish and rice.
- In a large sauté pan over medium-high heat, cook all ingredients until tender, about 1 hour.
- Transfer mixture to a blender and puree until smooth. Pour the ketchup through a fine sieve into a medium bowl.
- Season to taste with salt and pepper.
If you don't have it, substitute tamarind fruit with 1 tablespoon cooked tamarind pulp or tamarind paste.
