Tamarind ketchup

Description

This ketchup goes well with just about anything. It is especially good with fried fish and rice.

Ingredients

2 c tamarind (fresh)
2 c tomato (red tomatoes chopped)
1 c onion (white onion, diced)
3 clv garlic (minced)
2 bell pepper (red, grilled or roasted)

Instructions

  1. In a large sauté pan over medium-high heat, cook all ingredients until tender, about 1 hour.
  2. Transfer mixture to a blender and puree until smooth. Pour the ketchup through a fine sieve into a medium bowl.
  3. Season to taste with salt and pepper.

Notes

If you don't have it, substitute tamarind fruit with 1 tablespoon cooked tamarind pulp or tamarind paste.
