Tansy Pudding is typically served on Beltane, Midsummer and Ostara. Hang tansy over your entryway door to prevent evil from entering the house.
- Bring the milk and butter to a boil then pour over the breadcrumbs, set aside and allow the mixture to settle for 30 minutes.
- Beat together the sugar, tansy leaves, eggs, then, fold into the breadcrumb mix.
- Pour into serving dishes and bake at 350° F until the pudding sets.
- Remove from heat, allow the pudding to cool and place in the refrigerator until thoroughly chilled.
Serve with cream and honey.
