Toasted pita bread with spinach and garbanzo beans


This toasted pita bread with spinach and garbanzo beans provides a healthy vegetarian option.


1⁄4 c olive oil (extra virgin olive oil)
1 t salt (sea salt)
1 lemon (juice only)
1 cn chickpeas (15 oz can chickpeas or garbanzo beans)


  1. Heat the olive oil in a large frying pan. Add the garbanzo beans and cook for a few minutes. A
  2. dd the baby spinach in batches and cook until just wilted. Season with salt.
  3. Add the lemon juice and stir.
  4. In the meantime, slightly toast the pita bread and serve immediately with the spinach and garbanzo bean mixture.


Chickpeas are also known as garbanzo beans.
