Welsh Cakes

Description

A traditional Welsh recipe that works as a snack or treat.

Ingredients

4 oz butter
3 oz sugar
1 egg (beaten)
1 c currants

Instructions

  1. Knead the butter into the flour until a breadcrumb consistency appears.
  2. Mix in the sugar, currants, mixed spice and egg until forming a uniform dough.
  3. Roll the dough until 1/4 inch thick then cut out circles using all the dough.
  4. Cook the shapes on a griddle for 2-3 minutes on each side before sprinkling with caster sugar and serving.
