Yellow pepper sauce

Description

A sauce for boiled chicken or fish as the flavors and color complement each other.

Ingredients

1 lb bell pepper (yellow, chopped)
1 onion (small, chopped)
1⁄2 T butter
2 T cream

Instructions

  1. Place pepper and onion in a microwave proof glass container, add butter and a little salt.
  2. Cover and microwave on high for 5 minutes. Stand for 2 minutes.
  3. Mix in the cream. Check seasoning and serve warm.

Notes

When you are entertaining and coking on a tight schedule, this is a quick sauce for a pasta dish. Worth practising in advance to get it perfect when it matters.
