French style peas

Description

This recipe is an example of how a touch of herbs makes an incredible impact in taste. Peas can be prepared in small quantities, ideal for a dinner for one or two.

Ingredients

2 c
peas (fresh and shelled, or frozen)
4 leaf
lettuce (large, green leaves)
3  
shallots (French onions, or small onions)
1 spg
tarragon (or 1 teaspoon dried)
1 T
butter
   
salt (to taste)
   
pepper (white pepper to taste)

Instructions

  1. Wash lettuce leaves well and shake dry, cut in wide stripes. Peel onions and halve.
  2. Boil 3/4 cup of water in a pan with the salt. Add onions an lettuce leaves, cover and simmer for 10 minutes.
  3. Add frozen peas. Bring back to boil and simmer for a further 10 minutes, or until water is absorbed and peas tender.
  4. Drain. Discard tarragon sprig, if used. Transfer to a warm serving tray and sprinkle with water.

Notes

in some cases, we bow to convenience. Frozen peas is one of them. We love fresh peas on the pod. We use them while in season and we can find them in the stores; this is not very often. We use organic frozen peas most of the time.

Make this recipe dairy and milk free by substituting butter with 1-2 Tbs vegetable oil. Making it dairy free also makes it adequate for the most strict vegetarians. As it is, it would suit those who don't eat meat but allow dairy - milk, yogurt, cheese - in their diet.
