Baby spinach salad


Baby spinach is tender and sweet, perfect for a salad. Combine baby spinach with avocado and red onion, dress it with a perfectly balanced condiment, and the result is a delicious, anti-oxidant rich salad. Real healthy!


1⁄3 c yogurt (low fat)
2 T mayonnaise (low fat is better)
1 1⁄2 T vinegar (white wine vinegar)
1 t sugar
1⁄4 t salt
1⁄4 t pepper (white pepper or freshly ground black pepper)
1 bell pepper (yellow, seeds removed and cut into half an inch chunks)
1 onion (red, medium size, thinly sliced)
1 avocado (stoned, peeled and diced)


  1. Place the baby spinach into a large bowl, top with red pepper, sliced onion and avocado.
  2. In the meantime, combine all the dressing ingredients.
  3. Drizzle over the baby spinach, toss gently and serve immediately.
