Braised garlic chicken

Serve braised garlic chicken with potatoes, sauté or steamed, and steamed green beans.

Ingredients

5 lb chicken
  seasoning (salt and pepper to taste)
12 clv garlic (unpeeled)
1 c broth (chicken broth or stock)
2 T butter
1 c wine (white wine)

Instructions

  1. Season chicken pieces. Heat oil in a pan over a medium heat and brown chicken pieces.
  2. Add garlic cloves, shaking the pan to distribute evenly, cover and simmer for 15-20 minutes.
  3. Stir in wine and simmer uncovered until reduced by half.
  4. Add tomato purée, chopped tomatoes and bouquet garni. cover and simmer until chicken is tender.
  5. Remove chicken pieces and keep warm. Remove bouquet garni and discard.
  6. Add stock to the pan and reduce by a third.
  7. Strain the sauce to a sauce pan. Press the garlic cloves through a sieve and add the pulp to the sauce.
  8. Bring almost to the boiling point and reduce heat to the lowest point.
  9. Whisk butter in, a little at a time to finish the sauce.

Notes

Brown chicken legs first, for about 5 minutes, then add breast pieces and  cook for 10-15 minutes more, until chicken pieces are browned on all sides.

This recipe is gluten free if prepared with home made stock and tomato pure. If using stock made from a cube, check list of ingredients.
