Cornmeal mush

Corn meal mush is something South Dakota settlers ate frequently.They added molasses and cream when available.

Ingredients

4 c water
1 c cornmeal (yellow corrn meal)
1⁄2 t salt
  molasses (to taste)

Instructions

  1. Mix the cornmeal with 1 cup of cold water in a small bowl. Set aside.
  2. In a saucepan, bring to a boil 3 cups of water. Add the salt.
  3. Add the cornmeal mix to the boiling water. Bring to a boil again, stirring constantly.
  4. Reduce heat and simmer for 15 minutes, still stirring.
  5. Once cooked, pour into cereal bowls. Serve with molasses and cream on the side.

Notes

Stirring the cornmeal constantly while it is simmering will get rid of lumps and prevent the mush from sticking to the pan.

People can add molasses and cream to their taste.
