Creamy garlic mash

Creamy garlic mash is a wonderful accompaniment for a meat roast with strong flavor.

Ingredients

1 1⁄2 lb potato (peeled and diced)
1 T butter
1⁄4 c milk (warmed)
2 clv garlic (peeled and crushed)
  seasoning (salt and pepper to taste)

Instructions

Simmer the potatoes in boiling salted water for 15 minutes or until tender.

Drain and mash with the butter and milk until smooth.

Stir in the crushed garlic and olive oil and season to your taste with salt and pepper.

Notes

This mash can be made in advance and reheated when required with the milk.

Serve in its own dish or make mounds by the side of the sliced meat. Top with some breadcrumbs toasted in a pan with a little olive oil.
