Curried zucchini cream
A delicious cold soup. If you prepare your own garam masala, use it for this recipe.
Instructions
- Peel and dice zucchinis. Simmer until tender, 10-15 minutes, in 2 cups water. Allow to cool to near room temperature.
- Add yogurt, cream, garam masala or curry powder and blend until smooth.
- Chill in the refrigerator until ready to eat. Garnish with croutons and serve.
