This ketchup goes well with vegetables, such as roasted butternut squash, or tofu.
2 onion (medium size, chopped)
4 t salt
1 vinegar (spiced vinegar)
3 lb sugar (or to taste)
4 lb elderberry (washed, stalk removed)
- Place all ingredients into a pan, and simmer until the onions are tender.
- Push through a food mill and return the pan.
- Cook until sauce is thick and no excess liquid is on top.
