Fattoush

Description

This is a Tunisian salad with bread and cheese. It is similar to the Italian panzanella or Spanish old style gazpacho.

Ingredients

2 sli bread (flat bread or pita bread, toasted in the oven, and cut)
2 bell pepper (green, washed, seeds removed, cut)
2 tomato (large, washed and cut)
1⁄2 c cheese (Halloumi cheese, cubed)
3 scallion (chopped)
1⁄2 c olives (black and green mix, stoned)
1 cn tuna (optional, 8 oz can, drained and flaked)
4 T olive oil (for the dressin, erxtra virgin olive oil, and some more)
2 clv garlic (crushed)
2 t coriander (seeds, lightly toasted and crushed)
1 ds hot pepper sauce (harissa paste)

Instructions

  1. Preheat the oven at 400° F (200° C), drizzle a little olive oil and 1 tsp lemon juice over the bread slices and toast in the oven for 10 minutes.
  2. Cube the bread and sprinkle with 2 tsp lemon diluted in 2 tbsp water. Place it in a salad bowl. Add peppers, tomatoes, green onions, cheese, olives, and tuna. Season to taste and let it rest.
  3. Heat the olive oil in a pan, add garlic, crushed coriander and harissa. Cook for a couple of minutes. The garlic will start to color. Add the remaining lemon juice, stir, and pour this dressing over the salad.
  4. Let the flavors soak for at least an hour before serving.

Notes

Harissa is a hot chili sauce popular in North Africa. It comes as sauce or as a paste. If you don't have harissa, substitute with a litlte Tabasco sauce.

If you don't have halloumi cheese, substitute halloumi with your favorite cheese. Feta cheese goes well with this salad.

Yield: the original recipe will yield 4 servings as light meal - 6 servings as an appetize,r or side dish.

Cooking and preparation times do not include standing time.
