This is a Tunisian salad with bread and cheese. It is similar to the Italian panzanella or Spanish old style gazpacho.
- Preheat the oven at 400° F (200° C), drizzle a little olive oil and 1 tsp lemon juice over the bread slices and toast in the oven for 10 minutes.
- Cube the bread and sprinkle with 2 tsp lemon diluted in 2 tbsp water. Place it in a salad bowl. Add peppers, tomatoes, green onions, cheese, olives, and tuna. Season to taste and let it rest.
- Heat the olive oil in a pan, add garlic, crushed coriander and harissa. Cook for a couple of minutes. The garlic will start to color. Add the remaining lemon juice, stir, and pour this dressing over the salad.
- Let the flavors soak for at least an hour before serving.
Harissa is a hot chili sauce popular in North Africa. It comes as sauce or as a paste. If you don't have harissa, substitute with a litlte Tabasco sauce.
If you don't have halloumi cheese, substitute halloumi with your favorite cheese. Feta cheese goes well with this salad.
