Grilled ginger and lemon sweet chicken

Tender, juicy, flavorful chicken instead of the drier texture of plain chicken breast.

Ingredients

2 T lemon juice (freshly squeezed)
2 T ginger (ginger root, peeled and grated)
1 clv garlic (minced)
4 chicken (boneless and skinless)
1 lemon (optional, cut into four wedges)
1⁄2 c jam (red raspberry preserve)

Instructions

In a baking dish blend together lemon juice, soy sauce, preserves, ginger root and garlic.

Marinate chicken in this mixture for at least 15 minutes (longer is even better!)

Grill the chicken for 7 minutes per side or until no longer pink and juices are clear.

Serve garnished with lemon wedges.

Notes

Marinating before grilling helps keeps the chicken from drying out for a tender and juicier result than if you just grilled plain chicken. Use your favorite preserve or jam, lemon and lime give the marinade a more tangy flavor. Honey can also be an option, although you will need about half of it.

If the soy sauce used is gluten free, this recipe will also be gluten free. If on a diet, use light, low sodium soy sauce. Check the list of ingredients.

Garnish with four slices of lemon or four lemon wedges, to your taste.
