Lamb steaks grilled and served with pesto, tomato slices and grated mozzarella, a quick dish with Mediterranean flavor.
- Grill lamb steaks 4-6 minutes on one side and turn.
- Grill for 2 minutes cooking on the second side and brush the top with pesto, and top with sliced tomato, mozzarella and a little basil.
- Cook for 2 to 4 minutes more, until done to your taste. Just 2 minutes more for meat that is still pink inside.
Serve with salad and fries or jacket potato.
Omit the tomato, brush pesto and a top with a slice of cheese.
Substitute mozzarella with cheddar or Monterrey Jack.
