Butter breadcrumb crusted baked haddock

A butter breadcrumb topping is a classic and delicious way to enhance the flavor of New England baked haddock. A crunchy topping like this one adds a delightful texture and richness to the mild taste of the fish.

Ingredients

4 pce fish (fish fillets, clean)
1 c bread crumbs (preferably fresh)
4 T butter (unsalted butter, melted)
2 T parsley (fresh parsley, finely chopped)
1 t lemon zest (optional)
1 t garlic (optional, garic powder)
  seasoning (salt and pepper to taste)

Instructions

Begin by preheating your oven to 350°F.

To prepare the fish, place the haddock fillets in a lightly greased baking dish. Season them with salt and pepper.

In a bowl, mix the breadcrumbs with the melted butter. Stir in the chopped parsley, garlic powder, and lemon zest if using. The mixture should be well combined and slightly moist. Season with a pinch of salt and pepper. This is the topping.

Spoon the breadcrumb mixture evenly over the haddock fillets, gently pressing it down to adhere to the fish.

Place the baking dish in the oven and bake for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork. The breadcrumb topping should turn golden brown and crispy.

Once done, remove the haddock from the oven. Let it rest for a couple of minutes before serving.
